RECIPE

CAULIFLOWER BREDIE

Ingredients

2 onions – sliced thinly - 30ml vegetable oil - 1kg leg mutton - 1 ½ tsp salt - 5 whole cloves - 2 whole allspice - 1 green chilli - 2 tsp sugar - 150ml water - 1 cauliflower – broken into florets - 3 potatoes – quartered.

Method
- Braise onions in oil until golden. Add meat and simmer for 45 minutes, or until meat is well browned. Add salt, cloves, allspice, chillies and water. Bring to the boil and simmer for about 10 minutes until flavours are well blended. Add cauliflower and potatoes and cook until soft. About 20 minutes. Serve with rice.
