SAUSAGE PIES

FILLING

500 g chicken or lamb mince - 2 slices bread - pounded green chilies, to taste - 1 teaspoon crushed garlic - 1 teaspoon ground dhania - 1 teaspoon ground jeeroo - ½ teaspoon salt - ½ teaspoon fine black pepper - 1 egg beaten egg - sesame seeds

METHOD: Soak the bread in water and squeeze. Add the remaining ingredients for the filling and mix well. Roll into 20 cm long rolls, place onto a tray and refrigerate until firm enough to handle. Roll the pastry out on a surface sprinkled with corn flour. Cut into long strips measuring approximately 20cm times 8cm. Place the mince rolls onto the long end of the pastry and roll up as for swiss roll, sealing edges with water. Cut into little rolls, about 4cm apart. Place onto an oven tray. Brush with beaten egg and sprinkle with sesame seeds. Make two or three slits with a sharp knife across the top of each roll. Bake in a moderate oven until brown and crisp.

A CHILD'S MIND

A 4 year old little girl had an ear-ache and wanted a painkiller. She tried in vain to take the lid off the bottle. Seeing her frustration, her Mom explained it was a childproof cap and she'd have to open it for her.

Eyes wide open with wonder, the little girl asked: "How does it know it's me?”
