RED VELVET CUP CAKES

Ingredients:
1 and a ¼ cup flour
¾ cup sugar
½ tsp bicarbonate of soda
½ tsp cocoa
½ tsp salt
½ cup buttermilk
1 egg
¾ cup oil
½ tsp vinegar
½ tsp vanilla essence
1 Tbsp red food coloring

Method:
Sift dry ingredients. combine liquids, Mix dry ingredients into the wet ones, bake at 180 for 15-20 mins.

Icing:
Beat half a tub of cream cheese smooth. Add a ¼ tsp of vanilla essence, and a ¼ cup of sifted icing sugar and beat smooth. Gradually add 1/3 of a cup of fresh or double cream and whip till mixture is a pipable texture.Top with a crystallized rose petal, or two.

"Thanks for the game you gave me," little Joshua said to his uncle the first time he saw him after the holidays. "It's the best present I ever got."

"That's great," said his uncle. "Do you know how to play it?"
