Method
Marinate fish in salt, pepper and lemon juice

Batter Ingredients
2 ½ cups flour - 3 teaspoons salt - 8 eggs beaten - ¾ cup milk - 1/3 cup water - Oil for deep frying.

Method
1. Sift flour and salt in a bowl.
2. Whisk eggs and milk together with the water.
3. Add to the flour and whisk for 2 ? 4 minutes.
4. Coat fish in flour.
5. Dip in batter and deep fry in heated oil until golden and crisp.
6. Remove with a slotted spoon onto paper towel.
7. Serve garnished with lemon wedges and parsley with chips and tartar sauce.

Tartar Sauce Ingredients
500ml mayonnaise - 3 ½ Tablespoons gherkins chopped - 2 medium onions diced - 3 ½ Tablespoons chopped parsley - 2 teaspoon lemon pepper - 4 to 5 ml paprika.

Method
Combine all above ingredients together and stir.

THE STORE-OWNER

It was the day of the big sale. Rumours of the sale and some advertising in the local paper were the main reason for the long line that formed by 8:30 in the morning in front of the store. A small man pushed his way to the front of the line, only to be pushed back, amid loud and colourful curses.

On the man's second attempt, he was punched square in the jaw, and knocked around a bit, and then thrown to the end of the line again. As he got up the second time, he said to the person at the end of the line, "That does it! If they hit me one more time, I don't open the damn store!".
